A Note from Winemaker, Leo Gabica
“Throughout my career as a winemaker, I have thoroughly enjoyed watching varietals regain appreciation. Our Chardonnay is easily one of the varietals that has changed perceptions and is gaining traction for the favorite wine for many guests. When I approach our Chardonnay, I am looking to highlight the natural flavor profile and maintain the dazzle of acidity with a texture that brings everything together. Our Estate vineyard has a very tiny block of Chardonnay. Our vineyard is dry farmed and hand harvested, providing beautiful and deep flavors. For our 2018 Chardonnay, it is crafted from 71% fruit from our vineyard and 29% from Chateau Bianca. We have been working with Chateau Bianca for years to source Chardonnay. Their vineyard site is located in the Van Duzer Corridor AVA within the Willamette Valley, so the cool maritime air currents allow the fruit to be complementary to our vineyard. For our 2018 Chardonnay, I started the fermentation process in stainless steel tanks. After primary fermentation, I placed the 2018 Chardonnay in French oak barrels to complete malolactic fermentation. I used 12% new oak barrels, 59% second use, and 29% neutral oak. In total, the 2018 Chardonnay spent 17 months in barrel. Our Founder, Dan, would take the crew fishing on the Oregon coast before every harvest - a tradition I like to continue. I make sure to pack a bottle or two of our Chardonnay to bring with us to pair with the bounty of the day!”

It’s easy to say: pair this wine with seafood. It’s a classic pairing - but no one puts the 2018 Chardonnay in the corner! For an easy pairing - turn a locally baked baguette into crostinis that are topped with a wedge of brie, slice of prosciutto, and drizzle of local honey.
